CHOC BANANA BREAD.

Those of you who have read the previous post about our yoga workshop may like to have the recipe for our banana bread.

This is not my recipe, although I have tweaked it somewhat.  It comes from bills food  by Bill Granger and is such a popular cake in our house that I had to carefully prise the pages apart as the mixture had been dripped and not wiped off some time in the past!!

 

Choc Banana Bread.

2 cups spelt flour
2tsp baking powder
125g I salted butter, softened
250g light Muscovado sugar + coconut palm sugar
3-4 ripe bananas
2 eggs, lightly beaten
1tsp vanilla extract
175g good quality dark chocolate chips

METHOD

Preheat oven to 180C (350F/Gas4).
Sift together flour and baking powder.
Cream together butter and sugars, add bananas, eggs, vanilla extract and choc chips.
Fold in flour and baking powder….do not over mix.
Pour batter into non-stick or lightly greased and floured loaf tin (19x11cm).
Bake for 1hour 15minutes….may be less or more!
Leave to cool for 15minutes, turn out onto wire rack.
Serve with or without butter….we did not have butter as it is very rich already.
Makes 8 – 10 slices.

 


 
 

So there you have a delicious cake which actually features in the breakfast section of the book….I personally prefer it in the afternoon but give it a whirl and see how and when you like it.
