Here is a quick, easy and nutritious evening or midday meal….and it tastes good too.
There are three stages;
RED ONION
RED PEPPER
MUSHROOMS
Roughly chop up a red onion, red pepper and some mushrooms. Pop in a casserole dish and pour 2-3tablespoons of olive oil over and mix well. Place in a preheated oven, (180 ish) and roast for 30 minutes or until turning crispy brown…stir and turn occasionally……
CUP OF QUINOA
CUP OF FRESH/FROZEN PEAS
2 GOOD HANDFULS OF SPINACH
Place into boiling water 1 cup of quinoa, the water covers the quinoa. Bring to the boil and cook for about 20-25 minutes adding more water as needed. Take off the heat and fold in a cup of fresh or frozen peas and a couple of good handfuls of fresh spinach leaves. Season well with sea salt and pepper….
JUICE OF ONE LEMON
GOOD SLUG OF OLIVE OIL
SMALL RIPE AVOCADO
SEA/HIMALAYAN SALT+BLACK PEPPER
Place the juice of one lemon into a bowl with a really good slug of olive oil and mash into the mixture a small avocado and crushed garlic clove if you wish. Mix well and season with sea salt and pepper.
Quinoa (KEEN-wah) is a small and very quickly cooked grain-like food. It is nutrient-rich but unlike grains it has a high protein content and it is also typically considered to have a valuable amount of certain health-supporting fats. It is yet another of the superfoods that grow in hostile climatic and geographical locations..like MACA it comes from Peru.
I love quinoa because I eat no red meat and am always on the lookout for good sources of protein..it is too easy to simply gravitate towards cheese which is not the best thing to have on a daily basis.
